| Chicken Veracruz |
Serves 4 |

- 1 lb. Tyson® Fresh Boneless, Skinless Chicken Breasts, pounded
- 4 sheets (12x18 inches each) Reynolds Wrap® Heavy Duty Aluminum Foil
- 1 cup onion, chopped
- 3/4 teaspoon Goya® Minced Garlic or 1-1/2 cloves garlic, minced
- 1/2 tablespoon Goya® JalapeƱos, finely chopped
- 1-1/2 cups chopped tomatoes
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1 teaspoon Goya® Capers
- 6 Goya® Spanish Stuffed Olives, sliced
- 1 bay leaf
- Accompaniments:
- 1 8 oz. box Goya® Yellow Rice, cooked
- 1/8 cup fresh cilantro, chopped
- Lime wedges

- Preheat oven to 450°F.
- Center 1/4 lb. of chicken on each sheet of Reynolds Wrap Heavy Duty Aluminum Foil. Top chicken with onion, garlic, jalapeños, tomatoes, oregano, salt, capers, olives and bay leaf.
- Bring up foil sides. Double fold top and ends to seal packet, leaving room for heat circulation inside. Repeat to make four packets.
- Bake 15 to 18 minutes on a cookie sheet in oven.
- Serve over yellow rice, sprinkle with fresh cilantro and top with lime wedge.
