Chicken Veracruz

Serves 4
  • 1 lb. Tyson® Fresh Boneless, Skinless Chicken Breasts, pounded
  • 4 sheets (12x18 inches each) Reynolds Wrap® Heavy Duty Aluminum Foil
  • 1 cup onion, chopped
  • 3/4 teaspoon Goya® Minced Garlic or 1-1/2 cloves garlic, minced
  • 1/2 tablespoon Goya® JalapeƱos, finely chopped
  • 1-1/2 cups chopped tomatoes
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1 teaspoon Goya® Capers
  • 6 Goya® Spanish Stuffed Olives, sliced
  • 1 bay leaf
  • Accompaniments:
  • 1 8 oz. box Goya® Yellow Rice, cooked
  • 1/8 cup fresh cilantro, chopped
  • Lime wedges
  1. Preheat oven to 450°F.
  2. Center 1/4 lb. of chicken on each sheet of Reynolds Wrap Heavy Duty Aluminum Foil. Top chicken with onion, garlic, jalapeños, tomatoes, oregano, salt, capers, olives and bay leaf.
  3. Bring up foil sides. Double fold top and ends to seal packet, leaving room for heat circulation inside. Repeat to make four packets.
  4. Bake 15 to 18 minutes on a cookie sheet in oven.
  5. Serve over yellow rice, sprinkle with fresh cilantro and top with lime wedge.
